All care was taken to make sure that this, estate grown Chardonnay is the best it can be. The wine was whole bunch crushed and fermented in new and old French oak barrels for 9 months. Lees carefully stirred monthly. 100% of the wine went through malolactic fermentation in barrel giving the wine its rich, butteriness. It then spent approximately 12 months in bottle to mature and mellow. An elegant and complex wine with excellent length.

The Macedon Ranges is arguably Australia’s coldest grape growing region. It is cold by world viticulture standards, producing wines that have a lot in common with the cooler regions of France and New Zealand and bearing little similarity to those of the warmer parts of Australia where this variety is often grown.

The Macedon Ranges is very well regarded for its Chardonnay. Being a cold climate, the wines produced in the region tend to be elegant yet powerful and have a fantastic structure. The Chardonnay from Hanging Rock estate vineyard is grown from Mumm Champagne clones. We believe we are the only ones in Australia to use these clones.
